I have the i7 13" MBP, so looking at Geekbench my single core score is actually better than I would get from the X5690 (3500 ish vs 2600). Then I'd throw in new GPU, some flash storage and additional RAM. My budget is tight, so it would be a 4,1 which I would flash to a 5,1 but most likely a single core (I've already found an X5690 cheap on eBay). My initial thought was to Hackintosh, but I love the "cheesegrater" Mac Pros, and, upon seeing how usable they still are today, I'm now considering getting a 4,1 and upgrading it.
